| Creamy Shrimp Salad
This makes a great sandwich or as a salad on top of a bed of lettuce
or spinach. (Heck, this is so good it is hard not to eat it by the spoonfull,
all by itself!!)
Ingredients
* 1 pound bay shrimp, cooked
* Lemon juice (just enough to cover the top of
the shrimp laid out in a single layer or 2)
* 2 cups celery, chopped
* 4 eggs, boiled
* 4 ounces can black olives, chopped
* 1/2 teaspoon dry mustard
* 1/4 teaspoon garlic powder
* 1/4 teaspoon seasoned powder
* 1 dash pepper
* 1 1/2 cups mayonaise
Instructions
1. Marinate shrimp briefly in lemon juice; drain well.
Set to one side.
2. Chop eggs.
3. Combine shrimp, celery and eggs. In another bowl
combine olives, mustard, salts and pepper. Add olive mixture to shrimp
and toss.
4. Add Mayonaise and toss again lightly.
