Makes approximately 4 dozen cookies
Preheat Oven to 350 degrees

1/2 c. soft shortening
2/3 c. sugar
2 tsp. grated lemon rind
1 egg
3 tbsp. lemon juice
1 tbsp. water
2 c. flour
1/4 tsp. soda
1/2 tsp. salt
1/4 tsp. cream of tartar
1/2 c. chopped nuts

1. Mix together first 6 ingredients. Sift together and stir in remaining ingredients. 

2. Form balls size of small walnuts. Place 1 inch apart on ungreased baking sheet. 

3. Bake for 10 to 15 minutes in 350 degree oven.

4. Let cool for about 5 minutes then roll cookies in confectioners' sugar.
