| Geocruisers Ravioli and Spinach
Try this. Fast and easy.
This works better with frozen spinach. This dish may sound odd but
it is really good.
Ingredients:
8-10 oz. Frozen Spinach
4 Cloves Garlic (more if desired)
1/4 cup Olive Oil (more if needed)
Red Pepper Flakes
1 lb Ravioli ( you can substitute spinach fettucini or tortellini
instead)
Salt to taste
Directions:
1. Cook 8 to 10 oz of frozen spinach. Drain and squeeze out the water.
2. Cut up 4 or more cloves of garlic.
3. Sauté garlic in Olive oil ( about a ¼ cup or more),
red pepper flakes until garlic is golden. Remove from heat.
4. Boil one lb of raviolis. Cook. Drain. (Instead of using raviolis,
you can use spinach fettucini or tortellini. You may need to use more oil
with the fettucini. The first time I made it with the spinach fettucini
we ate way to much!)
5. Salt to taste.
6. Add cooked spinach, oil garlic pepper mixture and ravioli in
a large bowel. Just mix around until the oil and spinach is through out
the raviolis. Serve with grated cheese.
If you like more spinach use more. You also may need more oil because
I go by eye on the amounts.
